Ingredients

  • 2 teaspoons olive oil
  • 1 tablespoon lemon juice
  • 1 Lebanese cucumber, halved, chopped
  • 1 large green capsicum, chopped
  • 1 small red onion, chopped
  • 3 medium tomatoes, cut into wedges
  • 1/3 cup pitted kalamata olives
  • 70g low-fat feta, chopped

Method

  • 1
    Combine oil and lemon juice in a large bowl. Add cucumber, capsicum, onion, tomato, olives and feta. Toss to combine. Serve.
